Classic Ligurian (Taggiasca)
Our Classic Ligurian has a very light bitterness and very light, late pungency. We are really proud that this oil. Over the years our Classic Ligurian Oil has won many awards including most recently Silver at the Australian National Awards and a special mention at the Sol d'Oro Awards. It has appeared in Floss Olei for many years, which is a publication featuring the top 500 Extra Virgin Olive Oils from around the world.
Farm Blend (Medium)
Reflecting a little of the Classic Ligurian, the Farm Blend also has green aromas of walnut with the addition of light timber that carries on to the mouth. A touch of green tea / herbs on the palate. Moderate bitterness, pungency and tingling at the end. Gold & Silver medals at the Australian Olive Association's national show in the last two years. Fruity Blend (Medium)
Lovely aromas of ripe fruit, Sweet rockmelon, mashed bananas & a touch of honey on the palate. Late mild bitterness & pungency. Won a silver medal at Australian National Olive Association Awards this year.
Max's Blend - 2015 (Robust) yes, it is still available and as beautiful as when it was made!
Aromas of bananas, olive fruit and timber carry through to the palate along with a touch of green tea and green herbs. Moderate bitterness and pungency. Silver medal at the 2015 Australian Olive Association's national show.

Robust garlic flavour. Brilliant through mashed potatoes instead of butter. Use it in pasta and marinades. Beautiful on a roasted or grilled meats.
Camilo’s unique seasoning salts are made with Murray River salt, dried kalamata olives, herbs and spices. Made from ingredients, grown at Camilo and sourced locally whenever possible.
Original Olive Salt
Pure and simple, just olives and Murray River Salt. Finish dishes with this salt for a depth of flavour.
Lime & Chilli Olive Salt
Kalamata olives, limes and a teeny bit of chilli. Perfect with chicken, fish and pumpkin - or on the rim of a cocktail glass.
Spanish Olive Salt
A flamboyant spin on the original Olive Salt with the addition of tomato flakes, herbs and spices. Pat it into both sides of a lamb chop before grilling, or sprinkle over poached eggs. It is brilliant on freshly shucked oysters.
Baked Garlic Olive Salt
Made with locally-grown garlic. Adds a rich, savoury garlic flavour to roasts. Sprinkle over cooked vegetables.
A mix of cured Kalamata, Corregiola and Taggiasca olives - and sometimes, when they are ready, Jumbo Kalamata.
All our spreads including the tapenade are vegetarian.
Black Olive Tapenade
This anchovy-free tapenade is made with Kalamata olives, garlic, lime and chilli. Great on antipasti platters, smeared on crackers or bread or on meats such as roast beef.
Sweetened with apples and honey, this is lovely on a cheese board or on top of gourmet meats. Great with a goat's cheese or a blue cheese.
Caramelised onion, balsamic vinegar and olives result in a perfect accompaniment to grilled or roasted meats or use the relish as a savoury spread on sandwiches and wraps and of course cheese platters.
Honey Balsamic Glaze
Made with Australia aged balsamic vinegar and the honey from the bees on our grove. This award winning reduction is dynamic in both sweet and savoury dishes.
