Keeping your olive oil fresh
Always keep your extra virgin and infused olive oils in the dark and the cool - such as in the back of a cupboard not exposed to high heat in summer. This will help you to avoid three enemies of extra virgin olive oil: Heat, light and oxygen. To keep your bottled oil fresh, keep it capped at all times to exclude as much oxygen as possible. Buy oils in dark glass bottles because this also helps.
If you are a big consumer of olive oil, have a think about shifting up to cardboard casks with metallised bags inside - just like wine casks. The cardboard cuts out the light. The bags have taps on them that allow oil to be poured but exclude oxygen from breathing back into the bag as the oil is poured out. All you need to do is keep the cask away from the heat and the oil inside will last significantly better than it will in any other container.
